Yuzu Crab Temaki
I’m here with the boys again tonight, and while I’m not drinking for a few weeks, I’m still eating.
They have a new dish on their sushi menu: Yuzu Crab Temaki.
Think of a California roll with a hint of citrus, in a somewhat deconstructed form.
Real crab on a bed of sushi rice, half-wrapped in seaweed.
The hint of citrus added a fresh zing to the richness of the crab, balanced further by the acidity of the soy. It’s a more refined presentation of a very popular sushi roll.
Cactus is up to five sushi dishes now, and they’re all great.
