Ingredients:

350 grams all-purpose flour

340 grams European-style butter, cubed

3 tablespoons sugar

1 teaspoon salt

180 grams ice-cold water

Method:

In a food processor, combine flour, salt, and sugar. Pulse to combine.

Add 1/3 of the butter and pulse a few times. Add the remaining butter and pulse a few times until the butter is pea-sized.

Add cold water and pulse until combined. Do not overmix. Place mixture into a bowl and into the fridge for 30 minutes to chill.

Dump the dough out onto a floured surface and combine by hand, then roll out to a 10×20 sheet. Perform a tri-fold. Wrap in cling film and refrigerate for 2 hours.

Remove from the fridge, roll out to a 10×20 sheet, and perform a tri-fold. Rest for 30 minutes in fridge.

Repeat three more times.

At this point, the dough will be ready to use for whatever recipe you want.
