We popped in for brunch this past Sunday. El Santo has one of the few non-traditional Eggs Benedicts that I actually like.

It’s beef short ribs on cornbread.
Though I see they’ve changed it since I last had it. Before it was served in its own little cast iron pan. Now it comes with two round, biscuit-like pieces of cornbread. It certainly looks a little more traditional now, though not sure that’s a good thing.

The eggs were done very well and the hollandaise was nice. The cornbread was fantastic too, with a nice jalapeno kick to it.
If anything was wrong with it, there was a touch too much short rib — it’s already a very rich dish, and while I shouldn’t really complain about too much protein, it did upset the balance slightly.
Nevertheless, it was still tasty and we were sharing it so we were able to finish. Not sure I could eat the whole thing myself.
The potatoes are really good too, and that’s saying something coming from me.
If you’re an Eggs Benedict fan, this is definitely one to try.
