Cathedral Gin

Cathedral Gin is a little better than your average gin, but not by much. It’s fine, and I wouldn’t send it back, but I’m not rushing out to buy another bottle either.
Made by Phillips’ Fermentorium Distilling in a traditional copper still, it has flavors of ocean breezes and old growth forest. A bit too much old growth forest, honestly. The pine is front and centre from the first sniff to the last sip, with a sharp, resinous punch that bulldozes most of the other botanicals. You get a hint of something citrusy in there somewhere, but you have to go looking for it. If you love pine, you’ll probably be happier than I was. If you like a more balanced gin, this one leans too hard in one direction.
In a gin and tonic it holds up fine, since the pine cuts through the tonic. Neat, it’s a bit much for my taste.
It’s a decent bottle that does the basics well, just without much personality beyond the pine.
