I use spicy Italian sausage for this to give it a bit of a kick. Feel free to use mild if you don’t like it spicy.

Ingredients:

  • 1 pound pasta, a short tube of some variety works well here
  • 1 pound Italian sausage meat
  • 1 onion
  • 4 cloves garlic
  • 2 cups heavy cream
  • 1 cup chopped spinach
  • 1 cup grated pecorino or parmesan
  • Salt and pepper

Method:

  1. Boil pasta in salted water until al dente.
  2. Brown sausage in a heavy-bottomed skillet.
  3. Reduce heat, add onions, and saute until soft and translucent.
  4. Add garlic and saute until fragrant.
  5. Increase heat and add preheated heavy cream and stir.
  6. When the cream is simmering, add the spinach and cook for 3 minutes.
  7. Add cheese and stir to combine. Reduce heat. Season to taste.
  8. Drain the pasta when it reaches al dente, reserving a small amount of the pasta water.
  9. Add the pasta to the sauce. Add pasta water as necessary to achieve the consistency you like.

Top with more grated cheese and serve immediately.
