Ingredients

1 tablespoon finely minced ginger

3 cloves garlic, finely minced

1 cup dark soy sauce

2 tablespoons water

1 teaspoon cornstarch

1 tablespoon hoisin sauceA splash of mirin (about 1–2 teaspoons, or to taste)

Brown sugar, to taste (start with 1–2 tablespoons and adjust for sweetness)

Method

In a small bowl, whisk the 2 tablespoons water and cornstarch together until smooth to form a slurry (this prevents lumps).

Cook for about 5 minutes, stirring occasionally, until the sauce reduces slightly and thickens to a glossy consistency.

Taste and stir in brown sugar gradually until it reaches your preferred sweetness level.

Remove from heat.

Serve warm with your choice of protein (e.g., stir-fried chicken, beef, tofu, shrimp, or vegetables). Great as a glaze, stir-fry sauce, or dipping sauce.
