We are doing a bit of a crawl this afternoon around downtown.
Cardero’s, the Brass Fish and now Nightingale.
One of my favorites in Vancouver, I’ve been here a number of times over the last few years.

Today we are just having a drink at the very cool bar, but I’m grabbing something to take home to Merilynn.
She picked the 100 layer Lasagne.

Honestly on first glance I didn’t think a whole lot of this.
But first taste was another story completely.
Likely the best lasagna I’ve ever had.
I don’t know if you can see in the picture but it should not your typical stacked lasagna.
The layers are horizontal, not vertical. At first I thought maybe it was assembled like this but as I did some research into it it seems like it’s prepared in the traditional way and just presented on the plate like this.
Either way it’s absolutely fantastic.
The pasta is made fresh and is layered with bechamel, a beef and pork ragu and a porcini infused pomodoro sauce. And then a hefty amount of Parmesan on top.
The inside. The edges were crispy. The whole thing is just a masterpiece.
And this is after an hour on the rain home. It would be even better eaten in the Carnatic atmosphere of the restaurant.
Once again David Hawksworth has outdone himself.
