Mi Mexico

What with all the rumors that we have heard about the nightmare that is crossing the border into the US these days we have delayed a trip to Costco for some time now.

But the amount of good quality butter at our house is in dire straits. Very dire.

So it is with some reluctance that we are going to venture down to Bellingham today.

And as usual we will find somewhere to go for lunch after Costco.

So after picking up $100 worth of Kerrygold butter we headed to John’s favorite spot, Mi Mexico.

We have been here in the past and it’s always been in the “good” range.

But I was immediately disappointed to discover that they don’t have Jarritos here at all. What kind of Mexican restaurant doesn’t have Jarritos?

Bht t fortunately they do have Jamaica. A really good Jamaica. Even John was impressed with it, which surprised me being his first time and all having it.

And since it 11 am I’m having breakfast.

Huevis Rancheros.

Ok, it’s not the most attractive dish.

in fact it looks like somebody deposited their lunch on this plate. Not presented for someone to eat.

However it was delicious.

I want to say I don’t mind a sunny side up egg in this, but it was a perfectly done over easy, with a good amount of sauce on top, not drowning in it.

The beans were fantastic. It’s amazing how such a simple thing can turn out into such an incredible side dish. The rice was a bit bland but it soaks up all the extra sauce really well.

That’s one of the better huevos rancheros I’ve had in the last few years.

Mi Mexico is hey good spot for Tex-Mex.

but please start stocking some Jarritos.
