ingredients:
1 cup diced onion
1/2 cup celery diced
1 cup chopped carrots
1/4 cup finely chopped parsley
1 teaspoon chopped fresh oregano
5 cloves finely chopped garlic
3 tablespoons tomato paste
1/2 red wine
4 cups beef stock
1 cup diced beef, any leftovers you have
1/2 pearl barley
Method:
1. Saute onions, celery, carrots, parsley and oregano over medium low heat until onions are translucent, about 5 minutes.
2. Add garlic and cook until fragrant, about 2 minutes .
3. Add tomato paste and cook for a 3 minutes
4. De-glaze the pan with red wine, cook down down for 2 minutes
5. Add hot beef stock. And bring to a simmer.
6. Add beef and pearl barley.and simmer until beef becomes ender.
7. Season with salt, pepper and oregano to taste
