Preheat oven to 300 degrees

Ingredients

2 Cups Navy beans soaked overnight

1/2 pound bacon

1 large onion diced

1/2 cup ketchup

3 tablespoons molasses

1/4 cup brown sugar

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon mustard

1 oz bourbon

Method

Add beans and water used for soaking to a large pot and boil gently til soft. 1 to 2 hours.

Drain beans but reserve water.

In an oven safe dish add 1/2 the beans then layer 1/2 the bacon on top, then sprinkle in 1/2 the onions. Repeat with remainder of the beans, bacon and onions.

In a saucepan combine the remainder of the ingredients. Bring to a boil.

Pour the sauce over the beans and add reserved water to just cover the beans.

Cook covered for 1 and a 1/2 hours. Remove cover and stir gently. Cook uncovered stirring gently every 1/2 hour until done.
