Flakey Cheddar Biscuits
Ingredients:
2 and 1/2 cups all-purpose flour
2 Tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, cubed and very cold
1 cup grated cheddar cheese
1 cup cold buttermilk
Method:
Preheat oven to 400°
1. Add all dry ingredients into a food processor. Pulse for 5 seconds.
2. Add very cold butter cut into cubes all at once. Pulse for 10 – 15 seconds to achieve a pea meal type consistency.
3. Transfer to a large mixing bowl. Add cheese to dry mixture and combine.
4. Add buttermilk to form a slightly sticky ball.
5. Turn out onto a floured surface.
6. Working quickly to keep butter cold, pat or roll out into a square roughly 1 inch thick.
7. Cut into 4 square pieces. Stack the pieces one on top of the other.
8. Repeat steps 6 and 7 two more times.
9. Roll out into a rectangle with a final thickness of 2 inches.
10. Cut into squares for biscuits. If you prefer round biscuits use a cutter, being careful not to twist the cutter to preserve the layers.
11. Brush with melted butter (or melted garlic butter)
12. Bake in a 400° oven til golden brown. Approximately 13 minutes.
Serve immediately
Biscuits can be frozen unbaked in an airtight container. Thaw slightly before baking.
Do not freeze baked biscuits. They will be terrible!
