My recipe for classic bran muffins. Well sort of. No raisins to be found here. I substitute blueberries in for the raisins. A much better choice in my opinion. But feel free to replace the blueberries with raisins. Or go half and half. That’s entirely up to you.

    1 1/2 cups wheat bran

    1 cup buttermilk

    2/3 cup brown sugar

    1/3 cup vegetable oil

    1 egg

    1/2 teaspoon vanilla extract

    1 cup all purpose flour

    1 teaspoon baking powder

    1 teaspoon baking soda

    1/2 teaspoon salt

    1 cup blueberries

    Method:

    Preheat oven to 350 degrees

    1. Stir wheat bran into the buttermilk and let stand for 5 minutes.

        2. Beat in the remaining wet ingredients into the wheat bran mixture.

        3. Add the dry ingredients. Fold in the raisins.

        4. Fold in blueberries

        5. Spoon into muffins tins. I prefer muffin top pans.

        6. Bake until the centre springs back when touched.
