My favorite Chocolate Chip Cookies
ingredients:
170 grams butter (best European style you can buy) melted, cooled slightly.
150 grams brown sugar
109 grams granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1teaspoon vanilla extract
1egg + 1 egg yolk
280 grams all purpose flour
230 grams chocolate chips (Callebaut)
Method:
Preheat oven to 350° convection
1. Combine all dry ingredients in a bowl and whisk.
2. Using a stand mixer, whip butter, brown sugar and white sugar until creamy. At least 5 minutes.
3. Add eggs and vanilla and continue to mix for two minutes
4. Add dry ingredients and mix until just combined. Do not over mix.
5. Slowly add chocolate chips.
Scale cookies 50 each grams
Bake for 9 minutes. I like mine a little unerbaked do they stay soft and moist.
You can also freeze them for later baking. Scale all cookies off and place them separately on a cookie sheet and place the whole sheet into the freezer. When frozen solid put them in a ziplock and store in the freezer for up to 2 months. Bake cookies fresh whenever you please.
