Having lamb and Greek salad? Whip up a batch of pita bread.
It’s not much work, just needs a little bit of proofing time.
ingredients:
3 cups all purpose flour
3/4 cups warm water
1/4 cup warm milk
1 1/2 teaspoons yeast
1 teaspoon salt
1 tablespoon EEVO
EEVO for frying
Method:
In the bowl of a stand mixer add the water, yeast and sugar.Let stand for 5 minutes. This ensures your yeast is still viable.
Add the milk, salt and flour.
Mix on low for 1 minute, then on medium for 5-6 minutes until developed.
Remove dough hook, cover and let dough rise til doubled in size.
Divide dough into 6 equal pieces and form round balls. Rest 15 minutes.
Roll each dough ball into a circle, about 5″ in diameter.
Place on a cookie sheet with parchment paper. Cover with another sheet of parchment. Let rise for for one hour, til doubled in size.
Heat a saute pan on low-medium. Add a little EVOO.
Fry pitas on one side for one minute. Flip, adding a touch more oil. After one minute flip again and cook through, approximately 5 minutes.
Serve hot with freshly made Tzatziki.
Store in an airtight container on the counter for up to two days.
Can be frozen for a month. Just defrost and reheat with EEVO as before.
