Ingredients:
1 cup diced onion
1/2 cup diced celery
1 cup chopped carrots
1/4 cup finely chopped parsley
5 cloves finely chopped garlic
1/2 white wine
4 cups chicken stock
1/2 cup pasta of your choosing, I use Orzo
1/2 bunch fresh spinach, chopped roughly
18 1/2 ounce meatballs
Method:
1. Saute onions, celery, carrots and parsley until onions are translucent.
2. Add garlic and saute until fragrant
3. De-glaze pan and cook for for 2 minutes
4. Add chicken stock and bring to a simmer.
5. Add meatballs
6. Add pasta. Cook until tender.
7. Season with salt and pepper to taste.
8. Add chopped spinach.
Serve immediately
*Note: If preparing soup ahead of time, reserve and add cooked pasta and spinach immediately before serving.
