I had one of the best pasta dishes of my life in Vegas in November at Buddy V’s. I really did not expect such a great pasta dish there. Sometimes things just surprise you though don’t they?

I made up my mind in that moment that I would make the effort to master this dish.

It’s not a complicated dish, but there is a trick to making it just right.

This version uses pancetta, I have since learned the proper way to make it is with guanciali. I have procured some and will post that version once done.

It wasn’t as good as Buddy V’s this time. But I’ll crack it.
