One of the things I am really starting to like is how many small Mom and Pop establishments there seem to be around.
One such establishment is Patisserie 27.
On Jane St. You will find a lovely little bake shop with perhaps some of the flakiest croissants I have ever seen, Paris included. They are so flakey in fact I wonder if they might be cheating a bit.
In the trade we have SPS, a special shortening used for puff dougbs that has an engineered increased “puff”
Regardless, the croissants have a nice buttery flavour and are extremely flakey. Absolutely delicious. I could easily eat three or four.
We tried the Pain au Chocolate as well.
Just as flakey. I’d like to see more chocolate though.
They also have a nice selection of pastries and Macarons. I’ll get to those later in the week and keep you posted.
